Growing Season and Harvest
The 2007 vintage was characterized by warm and dry conditions for most of the growing season. Precipitation was lower than normal throughout southern Ontario. September and October were warm and relatively drier than normal yielding excellent conditions for harvest. The dry conditions created stress on the vines, forcing them to push their roots deeper for water, reduce the vigour of their foliage and direct maximum energy to fruit production. This results in slightly less fruit overall but more complex and flavourful fruit and excellent wine potential. Many wineries took advantage the longer hang times during the warm fall weather to harvest their grapes later at increased sugar levels. Overall, the 2007 vintage has excellent prospects to produce high quality wine.
Winemaking Techniques
This wine combines the best of Niagara vineyards. 100% of this wine was fermented in stainless steel to preserve the cool-climate fruit character of our Unoaked Chardonnay. After pressing and coldsettling, the must was transferred to stainless steel tanks to begin the fermentation process. A slow, cool initial fermentation took place at temperatures in the 16°C range. The wine was assembled and bottled in June 2008.
Winemaker’s Tasting Notes
This straw-coloured wine has aromas of grapefruit, apple and pear combined with some light mineral notes and lemon lime freshness. It is nicely structured on the palate with a crisp acidic backbone leading to a well-balanced finish.
Food Suggestions
Try with grilled chicken, scallops in a light cream sauce or pasta tossed with fresh vegetables. Just a great every day wine!
